Full bright straw with green tints. The bead is persistent and very fine. Aromas of brioche, lanolin, and wet stones present immediately, then a layer of stone fruit, flint, struck match and a forest floor/sous bois note. It changing, complex, volumous. Almost musky. The palate belies this depth as it is light on its feet – athletic not muscular, with core of candied green apple and white stone fruit corseted by a fine, lacey, lemon-citrus acidity that stretches the wine out to a savoury dry finish. Moreish, complex and elegant at the same time.
Chardonnay made using traditional methods – fermented in bottle and aged on yeast lees for 44 months prior to disgorging in June 2016 with minimal dosage.
