A blend of Pinot Noir (81%), Pinot Meunier (14%) & Pinot Gris (5%).
A blend of Pinot Noir, Pinot Meunier and Pinot Gris. The Noir and Meunier were handpicked and chilled overnight before whole bunch pressing with minimal press turns to keep colour extraction to a minimum. The whole juice including solids were then transferred directly to old barrels (6-12 years) for natural fermentation, followed immediately by malolactic conversion. The wine was then sulphured and remained on its lees for 5 months until blending. The Gris portion was fermented on its skins and remained on skins for 90 days, going through malolactic conversion, before pressing to old oak for 2 months prior to blending with the Noir and Meunier. The Gris is the main colour and phenolic contributor to the finished wine.
