Full golden straw colour with straw hints. There is both depth and complexity - ripe pears, honeysuckle and jasmine florals, spice and hay notes. The palate is rich and mouth filling. Depth and weight and sweet fruit are the first impressions, with pear and yellow stone fruit jostling for attention, followed by ginger lily and more hay like characters that transit the wine, along with the textural phenolics from the sensation of sweetness, to being distinctly savoury and surprisingly refreshing.
A range of techniques were used to produce this wine – handpicking and whole bunch pressing directly to 500 litre French oak puncheons for a natural fermentation, extended whole berry fermentation in open fermenters and maturation in old French oak.
