Pale straw with green hues. Aroma is complex and intense – struck match, white flowers, lemon leaf, white peach and spice. Depth and volume. The palate is pure and fine. There is a great depth of fruit that builds in intensity as it travels across the mid-palate.
The acidity is fine and fresh and keeps the palate focused. Complexing textural elements of the barrel fermentation interweave with the fruit and acidity to complete the package. The wine is in a beautiful place.
All grapes hand harvested and sorted prior to whole bunch pressing directly to French oak puncheons for natural fermentation. 20% of the barrels were new. Post-fermentation, the wine was matured on its fermentation lees for 10 months in barrel followed by a further 6 months in tank prior to bottling after a single filtration.
A cool spring wet spring followed by a long, dry autumn, with low crops and strong varietal characters. Flowering occurred in late October, fruit set in December and harvest on March 17th 12.5° baume.
