2008 864 Cabernet Sauvignon
Tasting Notes
Origin: Oakridge Vineyard, Coldstream, Yarra Valley
Grapes: 88% Cabernet Sauvignon, 12% Merlot.
Winemaking: The vineyard is located at the foot of the Warramate Hills at Coldstream, and is sited in grey-loam alluvial soils with both high clay and ironstone content. The vines were planted in 1996 at 2,500 plants per hectare, and it is cane pruned to achieve a crop load of 5t/Ha. This wine is sourced from a north facing mixed Clonal planting of Cabernet and an east facing block of Merlot. After hand picking on the 10th March, the grapes were chilled overnight in refrigerated containers then destemmed to closed static fermenters. Vinification began with a 4 day cold maceration, followed by a 14 day alcoholic fermentation with temperatures between 24 – 32°C. During this time the vats were pumped over and rack and returned daily. Post fermentation, half of the wine remained on skins for an additional 21 days before pressing to barrel for malolactic fermentation. The wine was racked off malo-lees after 4 months and then racked again in late spring.
Ageing: 15 months in 225 litres French oak barriques, of which 35% were new. The wine was blended in June 2009 and bottled with a single filtration in December 2009.
Description: Dark purple reds moving to brick hues. An unmistakable cabernet nose - briar, cedar, blackcurrants, blueberries, poached plums and tobacco leaf. The palate is even and textured with mid-palate weight and depth, still sweet fruited with cassis and plums but with drying savoury tannins and graphite that refresh and add to the long, tangy finish. A smooth, fragrant and mouth coating wine that is medium bodied.
Food pairings: Roasted and grilled red meats such as lamb, beef, and venison served with rich sauces. Mature salty, dry cheeses.
