Oakridge is proud to present a banquet based on the recipes of the French wine country of Bordeaux, as well as the broader Atlantic region of south-west France.
The food of Bordeaux is one of the most refined cuisines of France, outside of Paris. Entertaining in this region is as purposeful as it is Sauvé. Consequently, this menu is one of the more polished of the hearty Friday Night Full Moon Dinner series.
Entrecote Bordelaise “Entrecote” means beef from between the ribs; “Bordelaise”, in the fashion of the country-side around Bordeaux. Together meaning; ‘dressed accordingly’ - that is with shallots, wine and marrow; as well as ‘cooked in the method of’ - that is cooked over the flames of the vines and barrels of the region. We burn staves of old barrels, over which we cook dry-aged joints of rib from local, paddock reared beef.
